Induction Cooktop

The Induction Cooktop Checkout Program is a free program for Milpitas residence to try out a sustainable alternative to gas stovetop cooking. Induction cooktops can be checked out through the City's Lend-A-Tool program.

What is an induction cooktop?

Induction cooktops are an electric alternative to gas stovetops. They generate heat through magnetism. The magnetic coils in the cooktop's surface generate a magnetic field that sends pulses directly to the cookware. These pulses are what heat the cookware.

Why try an induction cooktop?

Induction cooktops are great for many reasons! Compared to gas stovetops, induction cooktops are:

  • Healthier: No open flame that causes indoor air pollution.
  • Safer: No hot coils or open flames compared to electric or gas stovetops.
  • Greener: No burning of fossil fuels that are released while cooking. Induction cooktops use carbon-free electricity and are 40% more energy efficient than gas stovetops.
  • Faster: Induction cooktops have better heat control and heat up faster than traditional stovetops

How to use an induction cooktop

Unlike other stovetops, induction cooktops use magnetic pulses to heat pans for cooking. In order to use an induction cooktop, the pan being used must be induction compatible. Most cast iron, stainless steel, carbon steel and all-clad cookware will work on induction cooktops. To test if a pan works for induction cooking, use a magnet. If the magnet sticks and holds to the bottom of the cookware, it will work on the induction cooktop.

If the magnet does not stick to the bottom of the cookware, then it will not work on the induction cooktop. Cookware made with aluminum, copper, glass, ceramic, and other mixed materials typically does not work on induction cooktops.
